docs: add matrix-alertmanager and clarify Matrix integration options

Browse Source 
Adds matrix-alertmanager as requested and provides clear descriptions
for all three Matrix integration options:
- go-neb (discontinued but kept for reference)
- matrix-alertmanager (simple Alertmanager notifications)
- matrix-hookshot (feature-rich webhook bridge)

Addresses review feedback on PR #2809.
